OK-- try my Kash "spicy-hot sea spiders" aka Szechuan Shrimp at

Lengthy recipe, but not as difficult as it may sound. One advantage is that
it's OK hot/warm/room temp (though probably not sitting around for hours...)
One lb. or 1-l/1 lb. of medium (50-count) shrimp ought to do it, sometimes
they're on sale...; for really mass quantity, I don't know. (Or maybe just
order in Szechuan Shrimp from the local Chinese...?)
Suggestion: omit the chopped water chestnuts, or maybe just chop them in
half, for easier spearing with a toothpick (which must be provided).
Order-in cold noodles with sesame/peanut sauce is good too, but would need
forks/chopsticks.
Other than that, your list below sounds quite adequate--
