I always assumed that "happy holidays" refers to the christian holidays
of Christmas and New Year's. Nothing to do with political
correctness...if it was, it would probably be "happy holiday", since when
you disregard January 1, each religion/ethnicity i know of that has a
holiday around this time has only one.
