The lowest common denominator for email is still plain ISO 8859-1.
There are people here whose mail programs won't even show the added
characters in Windows extended Latin-1 (code page 1252), much less
Unicode IPA or katakana. And malformed HTML is right out.
Which means, turn off the 'send as HTML' thingy, and don't use smart
quotes, M and N dashes, s/S-hacek, Y-diaeresis or Euro sign. Please.
