Well, I remember one of my early conlangs which did the same. It used Latinate roots, but altered the vowel of which-or-which syllable of the word for things like case, number, tense, etc... IIRC, it's name was /lingwe/ (written "lin-gwe" with a dot under the "e"). I remember also a language of around the same time which altered consonants instead of vowels for the same role :) .
