OT: Need info about The Netherlands/Holland

I am thinking about visiting Holland (or at least Amsterdam) for the
easter vacations and would like to know just how dead things are during
that time. The plan is to check out museums, parks, galleries,
restaurants, and not to shop, and Rough Guide says most publicly run
museums have Sunday hours during holidays. This in contrast with Norway
where everything shuts so completely down that if you forgot to shop
food you'll starve for days...

Furthermore, what should I absolutely not miss in Amsterdam?
