The sound change sequence you have here definitely is plausible. Might even
be the source of my dialect's [i\] epenthesis (without the [u\] step; it
probably proceeded more like [E] --> [@] --> [i\]), but I don't know enough
about USAian historical linguistics to make anything but a guess.
