Nitpicker's note: unless you Americans have messed it up completely, it's *ris*- de-veau, and the sound similarity with "riz": rice ("smile" is "sourire" and nothing else, the only word sounding similar to "ris" which has something to do with laughing is "ri", the past participle: "laughed") is completely accidental.
