I would recommend assembling The Virtual Conlang Textbook, which would
be a table of contents with virtual chapters, where the chapters were
links to good web articles. Many of the authors would probably consent
to have their sites printed and bound in a textbook for a single
classroom (but you'd need to contact each to ask).

I think all the content you need has been published on the Web by now --
it just hasn't been intregated into a single volume.
