What's exactly the difference with |u| then? Interesting to use the Umlaut that way. I have only seen |ö| pronounced like Danish |ø| (German, Swedish, Turkish), or like schwa (Komi).

Well, "Ulm" doesn't sound at all bad. In many cases language names are derived either from the region where they are spoken, or from a native word (usually something like "language", "human", or something more creative).
