LOL. It used to be claimed that the presence of too many sulfites was the
cause of our woes (i.e. those that are _added_; apparently they're added to
processed meats [Hot dogs, salami etc] too). But I think it turns out, ALL
wines contain them (it's now on most labels). I suspect it's more the
presence of various natural molds and other volatiles. (The same is true of
hard liquor.)
I've drunk my share of plonk, as well as mid-grades (US, France, Spain,
Italy, Hungary, Romania, Argentina, Chile, Germany) and a few #1s and grands
crus classés-- back in the 60s-90s in some quantity, without problems-- one
bottle per person at a dinner party used to be the rule of thumb-- but in
recent years more than 2 glasses of red, any quality, in particular has ill
effects (headache, stuffiness). White's a little easier, but not much. (I
have allegies to household molds as well. Bah humbug).
