No. But I can say "la grande (y) verde" (the large green *one*).
I don't know how this is classified in terms of PoS's; there's
no pro- anything here, but adjectives becoming nouns.
I just realised "one" is a pronoun (though not like the others)
AND it can be modified. In Spanish there's not such thing as
"one", probably because it's not needed (as above).
