In the case of a substrate, a language arrives in a place where another
language is already spoken, and this last language disappears, after having
influenced the invading language. A superstrate is the same phenomenon, but
inversed: it's the invading language which disappears, after having influenced
the original language though. So for instance Anglo-Norman was a superstrate of
English. And of course, there's the case of adstrates, where both languages
cohabit and influence each other, without one disappearing in favour of the
other.
