Unicode will indeed be the technology that allows us all to write and
view documents with Greek, Cyrillic, real IPA, Deva Nagari and so on
all jumbled together to our hearts content.
And to send it in email, you will use UTF-8, just like they do on some
webpages already.
But don't start yet, there are too many people whose mailreaders won't
handle it. Give it a few years, and use ASCII-IPA, ASCII-Greek and so
on while we wait.
