I guess it depends primarily on who the performer is. Musical "scores" from
that period weren't particularly generous with information; usually, they
contained nothing but the relative pitches of notes plus the text. So,
whoever performs it is automatically co-composing it.
Some performers do their very best to make it sound as authentic as
possible, but others regrettably use Hildegard's notes in contexts that
have very little to do with what the music is really about (pop, new age,
etc.)

I noticed a lot of different variations on this theme. Are these fragments
from a Kemrese mass, or something?
