Accidentally sent this straight to Tom. Sorry!

I can confirm that, but then I decided to look it up, and discovered
that "chipotle" doesn't appear in either of my Spanish dictionaries.
Furthermore, the word "chipotle" also doesn't appear in my
Webster's Unabridged English dictionary! What gives?

An online search said another variant is "chilpotle", but this also
doesn't appear in either of my dictionaries. However, this site
is helpful:

The site suggest that it is Nahautl (chile + poctli = "smoke").
