Romanian has a somewhat analogous change whereby /o/ and /e/ become /oa/ and /ea/ in stressed syllables. The triggering context for this is somewhat different--it depends on the next vowel, but it is restricted to contexts where Proto-Romance has a long vowel. Romanian also has e > ie as well, but only in contexts where Spanish doesn't. My conlang Tzingrizil has a u: > wa and i: > ja, which is related. In any case, it doesn't seem to be a rare change.
