I'd put a schwa-letter there (which I'd suggest to be e-umlaut, a la
Luxembourgish).

Again, for Schwa I'd suggest e-umlaut.  For [V], I think we could have
o-tilde, which is Estonian for [7].  I'm a big fan of taking examples
from European languages.
