After struggling all this (limited spare) time to get ColdFusion 5 to
work with Unicode (or at least non-Latin1 encodings), bit the bullet and
gave up until the server's running CFMX.
Good news is that any edit-related funkiness with accented characters
is gone.
Bad news is that no, you can't type stuff up in Chinese, Arabic, or
Georgian unless you type it up with the Latin alphabet, and
the Latin1 encoding at that, so Serbocroatian (or whatever it's called
today), Turkish, and their ilk won't be easy to type up either.
