That explains the odd spacing. There must be some character translation going on behind the scenes -- if I paste in the 〈〉 characters, I end up with 〈〉 in the preview. Using &#9001; and &#9002; gives me the correct characters, but using a font that doesn't match. I guess I'm stuck with less-than / greater-than <> or guillemets ‹› as substitutes. I think I prefer the look of the guillemets; at least they shouldn't cause trouble with most fonts... Well, it was worth a try.
