Fundamentally, sour comes from acids, and bitter comes from bases. (...and salty from salts). I suppose this chemical triad is opposed to the more organic one of carbohydrate [=sweet, sugar], protein [=umami, MSG] and fat taste senses. *Muke! -- http://frath.net/
