{-poiesis} is the more common spelling. The greek is {poi/hsis}... I guess
that would make the "proper" latinization {-poeësis} or {-poeisis}, but that
usage is rare--Google only finds two pages with "glossopoeisis", for example,
and bare "poiesis" appears 30 times more often than "poeisis".
