Ah, kim chee! Love the stuff. And fortunately, even though we don't have much in the way of Korean restaurants around here, we have a fair number of Chinese restaurants run by Koreans, which have kimchee on the table when you're seated. Yum. Don't want to be anywhere near the process of creating it, however. Kimchee-in-the-making is only a few places below durian on my list of "smells to avoid". :) -Mark
