In addition to what the others have already said I'd like to mention
that you should also make sure your email client/browser interface is
set to UTF-8, e.g. in Thunderbird you can go to Preferences → Encoding
when you write a new email, but I believe you can as well set UTF-8 to
be the default for all outgoing traffic somewhere in Edit → Preferences.
Google Mail could be explicitly configured to either automatically
decide on the encoding (which produced messy results for me) or to
always use UTF-8 the last time I looked.
