A form of unleavened bread in the form of a flat 2-layer disc, or pocket. One cuts off one end and stuffs various ingredients inside, especially falafel, which is balls of fried ground chickpeas (garbanzos, Cicer arietinum). The term "pita" itself is Greek, I suppose, but the entire West Asian culinary area uses it. No connection with Sp Port 'pita' = 'agave fiber', which is also used in English as a technical term.
