May we assume correctly that one uses the equivalent staple for areas where
bread might be a rare or elite food? Indonesia et al-- rice (one problem
here-- the price of rice was(is still?) subsidized by the govt.) ;
Mexico/C.America-- masa tortilla? Bolivia-- potatoes?
