Actually, displacing the sun from the centre won't change anything (except the depth of your tan!) for the same reason that it won't be any force from the sphere on the sun. Of course, this is no comfort, as if the sun starts to move the slightest relative to the sphere it will sooner or later hit it (Newton's first law). Then there's the little matter of the energy that get's trapped inside. The sphere's outside will have to emit the same amount of light as the inside receives, or it'll get quite hot. And don't ask me where you find enough oxygen to fill the area inside the sphere (you need a huge diametre for the inhabitants to survive starwind, flares, X-rays etc etc).
