As am I!
In the case of the Spanish Immersion Camp I attended, there was a
series of incentives in the form of prizes, both at the end of the
camp for those who used English least, and along the way for students
who "turned in" students caught using English. But it was a very
short camp (less than a full week); I don't know what is done in
longer-term situations.
