I do the same thing. Sometimes I catch myself and try to stop, particularly
if I am starting to echo regional accents in American English, my native
language. I don't want people to think I am making fun of them when I am
just unconsciously starting to talk like the people around me. I figure it
isn't so bad when I am speaking Spanish, since the people I am talking to
know it isn't my first language.
I wonder if this is a habit peculiar to the more linguistically-oriented
mind, or if it is just something that everyone does to a degree.
