Eggs here in the US are sold refrigerated. I would be leery of buying
non-refrigerated eggs. However, shortening is sold alongside the oils.
Doesnt need to be refrigerated even when opened because it's basically
solidified cooking oil (it can go bad, but it usually takes longer than it
lasts (even at our house and we really dont bake much), and when it does
go bad, you know). 'What weirds me out is people who leave butter out at
room temperature.
