Afaik, this _s_ comes from the genitive, but has gotten a
life of its own.

We have some of these in Swedish too. Gatukök: gata + kök
(gatu is the old (feminine) genitive). Saluhall, ladugård
and sagobok work the same.
I think we have some other vowels which work like this as
well, but I can't come up with any examples.
