I think most conlangers are interested in things like allophones because
they believe that all human languages have things like allophones.

(I don't recall ever seeing any evidence of fanaticism among conlangers
with respect to phonetics or phonology, though. On the contrary, the
phonological descriptions of conlangs tend to be just as underspecified as
those of natlangs.)
