Grapefruit is sweet and bitter, lemon is sour. Quinine, hops and rowan berries are bitter. Vinegar and vitamin C are sour. Sourness can be counteracted with sugar; bitterness cannot (though salt has some effect). Regards, Nick Maclaren.
