Allow me to jump into this fray...  (If nothing else as a representative of
Ling-yi-Rumaig, another Romance outlier language :)

You could try using the PC-kimmo program and its various auxiliary
programs, found somewhere under <ftp.sil.org/computing/> IIRC to apply the
proper sound-changes to the Latin text.  That should speed things up
appreciably!
