The American isn't like that, but the *Spanish* is--it's /"tako/ in Spanish, so it's entirely possible that the [a] is getting borrowed with "taco". IMO: [t_hak_hoU] sounds most normal, [t_hAk_hoU] sounds most Englished, [t_h&k_hoU] sounds just weird. *Muke!
