The Oxford Canadian Dictionary lists both, but "filet" is given as an alternate
spelling for "fillet." It lists the British pronunciation first and the
American pronunciation second, but while I've heard (and possibly used) both
pronunciations, my personal preference would be to spell it "fillet" but
pronounce it /fI"lej/.
Canuckian compromise, true to form. Spell it like the Brits (well, more or less like the
Brits) and pronounce it like the Yanks (well, more or less like the Yanks).
Except for "lieutenant," which everyone knows ought to be pronounced
"leftenant" except for the backwards yokels who pronounce it the American
way... ^_^
