That sounds like (US) hash (very little liquid used), meat chopped or ground
up quite fine.

Definitely hash. Usually (chez moi) an egg poached in the middle of the
mixture just before serving.

Sounds more like a beef stew (meat cut up into chunks + veggies, liquid
used, becomes thickened because you dredge the meat in flour)-- if you use
lamb it becomes "Irish stew"; or maybe "pot roast" (big piece of
lesser-quality beef, liquid, veggies, cook a long time).
