Yummmmm! In China you had to buy slabs of fat and render it yourself, after which you had a vat of lard with little floating bits therein, known as crackling. You strained off the crackling and could salt it and nosh as a little crunchy snack. When you said "salo", I thought they spread it, lard-like, on bread or crackers, like schmaltz. Disgusting, but not unimaginable. (Can't say I ever sucked on a spoonful of lard like a spoonful of peanut butter.) Raw, huh? I'm sure in callower times, some raw pig fat probably made it past my tastebuds and was enjoyed (with soy sauce, slurp). But the older, wiser me has grown to like his arteries. Kou
