I've heard (in the US) a version of "Once in royal David's city" with some Latin phrases interspersed--e.g. "in praesipio" 'in a manger'-- and I believe the King's College choir sings that version in their annual broadcast Xmas Eve Service of Lessons and Carols. But the version in my old (1940s) Episcopalian hymnal is all English.....
