This is a very common alternation in language.

Actually, it's pretty common in English to have an
[o]-like sound in place of the 'dark L'. I know it's
how my cousins pronounced words when they were
younger; /little/ was pronounced ["lI.4OU] or
something like that.

Nominally, Mandarin has syllabic sibilants (wow,
that's hard to say fast :). It's perfectly reasonable,
if a bit unusual.

Maybe not so pervasive, but it's perfectly reasonable
to make alternations between the pairs [i]/[j],
[u]/[w], [l]/[OU] and [a]/[h\]. For even greater
wackiness, you could do what Spanish did and shift [j]
to [x] over time, as well as [w] to [v] to [b/B]:
L. vita ["wi.ta] ---> S. vida ["bi.da] (some dialects)
L. Paulus ["pau.lus] ---> S. Pablo ["paB.lo]
L. justus ["jus.tus] ---> S. justo ["xus.to]
(I may have messed up vowel length with some of the
Latin words, but it's irrelevant to the discussion
anyways)

Vowel-consonant alterations are hardly rare, but
definitely not to the extent you're proposing. This is
interesting; do continue down this track :).
