It's probably a dialectal thing, as Nik says. It wouldn't hurt my
ears to hear "la azúcar blanca", since it sounds correct, but on some
reflection I would always say (and write) "el azúcar blanco".

For "el mar" - "la mar", it's a different matter. "La mar" has a
definite poetic or archaic sound.
